I am obsessed!

As I have told you before I love cookbooks!  And I have found a new one that I really love.  The title is "The Oh She Glows Cookbook" and it is by Angela Liddon.  There are a few reasons I love this one, first of all so far the recipes are delicious! Always a good reason! Second of all she puts prep time and cook time! I love that, there are so many cookbooks out there that say simple and fast and yes cook times are short but you end up prepping for an hour, at least she gives you a heads up. Thirdly she uses whole foods so you know I was sold!  Love it! Just so you know it is a vegan cookbook, I actually like this as well because I rarely eat fish especially if I am eating in and it gives so many healthful alternatives to just salad and pasta.  Remember I have said before I am cooking impaired (I'm sure thats a thing, right?) so this definitely helps.  

I have mentioned before how I love, love breakfast.  It's my favorite meal of the day!  In the "Oh She Glows Cookbook" she has quite a few options but my absolute favorite, the one I am obsessed with is the "out the door chia power donuts"!  I love them, so easy to make, so easy to take with you and so easy just to grab on a busy day even if you are staying at home.  I have not made the Coconut-lemon Whipped Cream to go on top yet but I am excited to try it too.  Seriously who doesn't love donuts??  Both my kids love them and they have been so picky lately!

I am including a picture of them and they look a little different than a regular donut because I did not have a donut pan.  I didn't actually know there was such a thing, anyway I found a pan that I think you are suppose to make little angel food cakes or something like that and I used it instead.  They came out great so it worked out ok I guess :). I have made these once a week for the past three weeks just so I have something to grab when I am on the run.  Another favorite is the "apple pie oatmeal", that one is so good it could be a dessert!
